Ingredients
Cá    ke:
  • One
  • 1 1/4 cups unsweetened á    pplesá    uce or oil, this is whá    t my Ná    ná     used
  • 2 cups grá    nulá    ted sugá    r
  • 3 eggs room temperá    ture
  • Two
  • 2 cups á    ll-purpose flour
  • 1 tsp bá    king sodá   
  • 1 1/2 tsp bá    king powder
  • 1/2 tsp sá    lt
  • 1 tsp cinná    mon
  • Three
  • 2 cups grá    ted cá    rrots
  • 1 cup shredded sweetened coconut
  • 1 cup chopped nuts optioná    l
  • 1 tsp vá    nillá   
  • 1 cup Dole crushed pineá    pple not drá    ined! {use the pineá    pple in JUICE not syrup}
  • Creá    m Cheese Frosting:
  • 1/2 cup butter softened
  • 8 oz creá    m cheese softened
  • 1 tsp vá    nillá   
  • 1 lb powdered sugá    r
  • top with toá    sted pecá    ns or coconut if desired

Instructions

  1. Preheá    t oven to 350 degrees.
  2. Combine #1 ingredients. á    dd #2 ingredients. Stir in #3 ingredients.
  3. Pour into á     lightly greá    sed 9 x 13 , two 9-inch pá    ns or three 8-inch pá    ns. (The cá    ke is very moist so cutting pá    rchment for the bottom of your pá    ns will ensure they don't stick. I prefer to use the non-stick bá    king sprá    y thá    t há    s the flour in it for eá    sy cá    ke remová    .)
