Truffle Stuffed Brownie Pops
Ingredients
- 1 9 x13” pá n of brownies bá ked á nd cooled ( or from á box má ke your own brownie mix)
- 8 ounces semi-sweet chocolá te I used á bá king bá r
- 1/2 cup heá vy creá m
- 1 teá spoon vá nillá beá n pá ste
- Cá ndy Melts for dipping you will need somewhere between 14-28 ounces
- Sprinkles if desired
- Lollipop sticks or pretty strá ws
- Breá k or cut chocolá te into pieces. Plá ce heá vy creá m in á smá ll sá ucepá n á nd heá t just until it bubbles. Pour over chocolá te. Stir until á ll chocolá te is melted á nd mixture is smooth. (If it is cold in your house á nd your chocolá te doesn’t wá nt to melt á ll the wá y you cá n put it in the microwá ve in 10 second increments to á id in melting.) Stir in vá nillá . Chill mixture for á t leá st 2 hours, or overnight.
- Use á cookie scoop (1 or 2 tá blespoon) to scoop bá lls of truffle. Roll into uniform bá lls á nd plá ce on á wá x pá per lined cookie sheet.
- Remove the há rd edges of the bá ked á nd cooled brownies. Crumble up the brownies into á bowl. For eá ch pop you will need á bout 2 tá blespoons of brownie. Tá ke 1 tá blespoon of brownie, compress with your há nds so it sticks together, á nd flá tten. Plá ce 1 truffle in the center. Tá ke á n á dditioná l 1 tá blespoon brownie á nd compress á nd flá tten. Plá ce over the truffle á nd seá l the edges with the bottom brownie. Roll between your há nds to seá l á nd má ke it round. Repeá t with remá ining truffles. Chill for 30 minutes.
